Saturday Sandwich

puzzleIt’s a bit of a mouthful, but it surely is yummy. Gathering my goods for this Saturday sandwich. Gonna stay right at home tomorrow, work on my puzzle and chow down on this tasty combination! It’s the only way I can entice TD to assist with the puzzle; otherwise, he’s on the golf course or working on his crosswords! I just L.O.V.E. this sandwich toasted, on a Saturday, and I savor it over a full 45 minutes! Small bites delivering big flavor; that’s what I’m saying. Sometimes I even sip a mimosa with it! Now you just may be noticing that blue solo cup on the game table…Brenton can’t understand it, with my obsession for glassware. It’s just another tale of the unexpected. And so it goes…

Pimento Cheese, Bacon and Tomato SandwichSandwiches Pimento cheese II

1 recipe of Peg’s Pimento Cheese (repeated here for convenience)
4 slices of Health Nut bread
1 tomato, sliced
4 strips of precooked bacon, warmed

Pimento Cheese:
4 oz cream cheese, room temperature
1/2 cup mayonnaise (I use Hellman’s Light or Duke’s)
1/2 cup fat free sour cream
1 1/2 cups grated sharp cheddar
2 cups grated pepper jack
4 oz pimentos, drained and finely chopped
1/2 t black pepper
1/3 cup sugar

Mix all together.

Spread pimento cheese on 1 slice of bread.
Top with tomato slices and bacon.
Top with another slice of bread.
Cut in half.

Makes 2 sandwiches.

Naturally you’ll have pimento cheese left over, but who minds that problem? Not this girl.

Game Night

Sis and Bro Beer Ponging!

Sis (moi!) and Bro (Will) Beer Ponging!

(Pretend it’s yesterday, when I meant to post this!) Moving from the elegance of last weekend’s soiree to Flashback Friday…you can often find a casually clad gang at the Hardee Home for Friday Night Game Night. My friends are the greatest sports. Albeit I do take credit for knowing who will enjoy these shenanigans, and who would rather be included in an evening of a different theme! These were Friday night parties in 2012. Get ready 2014! So here ya go: Minute to Win It and Beer Pong straight up in the kitchen following supper (yes, supper!) PS…where was the kitchen fairy when I needed her?! PtothePS…Absolutely no Southern Cocktails involved here. Try it sometime…it’s a BLAST! It’s so simple to make the Minute to Win It games. And most of the time we don’t even mess with a timer. We’re too busy laughing and having fun! Cheers!

My Bro, Will

Italy 409CN TowerUh Huh … I am SOOOOO proud! My brother Will is always AMAZING and this week he added another medal to his lapel. He climbed the CN Tower, the damn tallest tower and longest flight of stairs IN THE WORLD.  Yep … you read it properly … IN THE WORLD.  He is currently my number one hero! Upon completion his email was titled “Mission Impossible Completed”. The concrete staircase is composed of 1776 steps, and then you get to venture on to an observation deck and catch your breath! Well Yes Maaml He Earned It! P to the S … He is currently consulting with yet another pharmaceutical manufacturing company, hence his time in Toronto!CN Tower II

Chipless Wonder

Appetizer Chipless CookieI’m turning the light on for ya! In 1995 TD and I were invited by multi-generation friends, the Webbs to join them on Long Island for the US Open at Shinnecock Hills. Uh…it didn’t take a microsecond to accept with pleasure. The golf was ok, but the cookies were even better! Wait Wait Just Kiddin’. Corey Pavin proved unstoppable and we walked the course two entire days, where I saw my first ever female caddie…um I would’ve carried his bag too. It was Nick Faldo and he was easily Harrison Ford’s best lookalike! After golf, we rambled around Southampton and stumbled upon Tate’s Bake Shop. LIFE CHANGER. Yep. Still hooked on the Chipless Wonder, some 18 years later. Rather wonderful with a cup of coffee as my 4:00 slump pick me up, but love them best with Brie! Mmmmm. Order online if your local grocery doesn’t carry them!

Birds of Paradise, and More

Birs of Paradise I

Patrick Mavros sterling creatures on the right, one of Kate and William’s favorite things! More on that later!

Gray and her sweet Liam were in ENC from Boston for 72 all too hasty hours a couple of weekends ago. So we had ourselves a mojito party, ok, a “show off the darling 2 year old” party! I wanted flowers, but couldn’t dare to take precious time away from “sweet cheeks” (nod to Bonny!) to create complicated arrangements; so I came up with these simple ones to dot around the house. Worked well and took all of 10 minutes! Did a bit more for the dining room center piece; but, silly me, I forgot to photo that! Placed both the bar and nibbles on dining room table so as not to have a lavish spread for a 5pm Sunday afternoon party. Simple, casual, still stylish!Hawaiian flowerAND…here is “sweet cheeks” himself!

Frances

Frances. She doesn’t even need a second or last name. She is so wonderfully brilliant as Frances! She is my heart’s desire. When I was a teenager at the CBC in Atlantic Beach we played tennis together…her long lean legs and her swift strong racket swings always overpowered me…I had no chance! Our Mothers were dearest of friends and taught us early by example how to have a lot of fun. Then our worlds cycled differently. And we drifted…far. But an amazing thing about this world wide web is that you CAN reconnect. This gal doesn’t sit still for even a skinny minute. Goodness, her life is full and fab, as is her BLOG. Read this and subscribe ASAP. If you hesitate, you’re the one missing out!
