Sautéed Cabbage Salad

It rained a lot and has been really wet recently (I mean the golf course was closed often); but hey, we’re counting rainbows around here, not thunderstorms, right? Here’s another fun recipe from The Kitchen. This one hails from Sunny Anderson, who has been cooking outside during the pandemic, from her home patio and grill for months, and now back on the set of The Kitchen, but outdoors, planes flying overhead and all sorts of weather…kudos to her, and a terrible run on sentence! This one is light, bright, and full of delight. We dodged those raindrops, never got wet, and managed to drive the sunshine of a crisp salad right into your kitchen. I just love cabbage/slaw; but most people don’t think about serving it in the winter. Try this sauté and it will change your mind forever!!

For Salad:
3 Tbs olive oil
1/2 t celery seeds
1 cup shredded carrots (available shredded and bagged for you at the grocery)
1/2 head green cabbage, thinly sliced (I used a mixture of green and purple ’cause that’s what was in the fridge)
Kosher salt and freshly ground black pepper

Heat olive oil in a large skillet over medium heat.
Add the celery seeds and let cook for 1 to 2 minutes to bloom.
Add carrots and cook for 2 to 3 minutes.
Add cabbage, season with salt and pepper, and continue to cook until cabbage begins to wilt, about 5 minutes.

For Dressing:*
1/2 medium red onion, sliced paper thin
2 Tbs honey
1 Tbs sambal (an Indonesian chili paste) A good substitute is Sriracha or Harissa sauce.
1 Tbs apple cider vinegar

Place onion in a medium bowl.
Add the honey, sambal and vinegar.
Mix together to coat and let sit for 5 minutes.
Add the onion mixture to the skillet and mix in.
Transfer to a serving bowl.

*I used Annie’s Asian Sesame bottled dressing. I just had it on hand, and I’m personally not wild about onions with my cabbage salads!
But I did drizzle a touch of honey over the salad before tossing in the dressing.

Salad on the left above is prepared just as suggested in recipe (except of course my bottled dressing!). To the salad on the right above, I added shaved almonds and salad topper Wonton Crisps. I just love a crunch in my salads.

Go wild and make it your own; or for simplicity just do it like Sunny! Make it happen captain, right at home.

Lemon and Pepper Jelly Shrimp

The great Rocco DiSpirito was on The Drew Barrymore Show a couple of weeks back and I was blown away! Rather than totally freak out when I researched his life as a chef, I decided to Keep Calm, Munch On, Try his Recipe, and Order a Couple of his Books. No recipe hunting for you this weekend good folks; I’m just handing it out to you. Just enough spice to make you happy but not ring the fire alarm! This is so full of ease and joy to prep, that you will be cooking it quite often. Add a simple salad or asparagus (to my version) and you have a totally balanced meal, nutritious, and calorie conscious. This food is pure art; and…we’re off!

This is what you need:
1 lb large, cleaned shrimp
2 Tbs olive oil
1 t coarsely ground black pepper
1 t coarse ground salt
2 Tbs butter
Juice of a lemon
3 to 4 Tbs Pepper Jelly, to taste*
2 cloves garlic, thinly sliced

*I used Jammit Jams Garlic Pepper Jelly, so I omitted the 2 garlic cloves.

And this is how you do it:
Blot shrimp dry with a paper towel.**
Season with salt and pepper.
Heat large skillet over medium high heat.
Add 2 Tbs olive oil to skillet.
Add shrimp, seasoned side down, and sauté for 2 minutes.
While this is sautéing, season the “upside” of the shrimp.
Flip shrimp over with tongs and cook second side 2 minutes.
Immediately remove shrimp to separate bowl.
In hot skillet, add lemon juice, butter, and pepper jelly.
Stir until jelly is meted and all is combined, about 2 minutes.
Toss shrimp back in skillet and stir to cover with sauce.
Serve over cooked rice.***

**I blot most things dry before placing in a skillet…shrimp, scallops, chicken, beef, and pork fillets. It improves the texture during cooking if the protein is dry when added to the pan. Trust me!
***Rocco’s recipe calls for sautéed broccoli rabe to be served with this shrimp, which really cuts down on the calories. Unfortunately, that’s not one of my favorites, and honestly, I really like a little starch. OOPSIE !! I think we have a winner here; and speaking of winners, Super Bowl LV is in 8 days…who’s going to win?

Roasted Chicken Breast with Polenta and Cherry Tomatoes

Wake up Monday…I’m here to put some well being in to your day. The last couple of weeks I took some personal time to try a few recipes that I have seen on Food Network, daytime talk shows, and in magazines. I went straight by the recipes (well, for the most part)! It was fun, mindless cooking, with the recipe front and center, rather than analyzing and creating. So remember the Buddy System and pass it on; be sure to tag the source if you post it on the Insta. This first one is from Katie Lee Biegel, as seen on The Kitchen a couple of weeks ago. Kicks you happily in the back of the throat and keeps you smiling. Simply put, it’s simple but not simplistic. How’s that for using a “root” word thrice in one sentence…grammar baby! Ha!

Nonstick cooking spray, for the baking dish
1 lb tube polenta, sliced 1/2″ thick
Kosher salt and freshly ground black pepper 
5 Tbs extra-virgin olive oil, plus more for serving 
2 boneless, skinless chicken breasts 
2 t Italian seasoning* 
1/2 cup grated Parmesan, plus more for serving 
6 cloves garlic 
1 pint cherry tomatoes (a slight break from Katie’s recipe, because this is what I had on hand)

Preheat the oven to 400 degrees F.
Spray a baking dish with nonstick cooking spray.
Place 5 slices of polenta in an even layer on the bottom of the baking dish.
Sprinkle with salt, pepper and 1 Tbs olive oil.
Place the chicken breasts on top of the polenta slices and sprinkle with salt and pepper.
Top each with the Italian seasoning* and Parmesan.
Arrange the garlic cloves and tomatoes around the chicken.
Sprinkle with salt and pepper and drizzle with the remaining 4 Tbs olive oil.
Bake until the internal temperature is 165 degrees F on an instant-read thermometer, about 30 minutes.
Garnish with Parmesan and olive oil to taste.
Serve warm.

*If you don’t have premixed Italian Seasoning, simply combine and whisk together the following:
1 1/2 t dried oregano
1 t dried thyme
1/2 t dried basil
1/2 t dried rosemary

Hunting for a bodacious appetizer to wow the fam this holiday? Brenton and I bagged this at a lovely little Mayfair bar in London. I came home determined to crack the code. Mighty Tasty…Just Saying. Softly melts that cheese and is delicious all the way down the hatch!! Not much prep work. But…please dispose of the used oil properly. Just trying to do my minuscule part to protect our earth and its’ waters.

1 small wheel of Brie*
1/2 cup Panko
2 egg whites
1/2 cup olive oil

Cut Brie into quarters.
Pour Panko into shallow bowl.
Beat egg whites together in small shallow bowl.

Heat olive oil in small sauce pan until hot.

Dip cheese wedges in egg white, and then in Panko, coating thoroughly.
Place 2 or 3 wedges at a time in hot olive oil 1 minute on each side.
Place on paper towel to drain.
Repeat with remaining wedges.
Serve with crackers or apple slices.
*This also works well with wedges of Manchego cheese.

Here’s your destination for holiday inspiration! SO happy to have a full house for the week of Thanksgiving, that I’m doing things now that can successfully be completed in advance. Admittedly the kitchen is my sanctuary most of the time, but I want to get out there and play with my gang..driveway hockey, big wheels, Heads Up, Hardee Pardee, and who knows what else. This is a fab breakfast bread. Bonus…it freezes fabulously (I tested that). Now just sit back and wait for the oohs and aahs. Note: Recipe doubles beautifully. And, I made a pan of mini loaves as well (see pic below) reducing baking time to 25 minutes. Can’t wait for the smiles!

2 cups all purpose flour, divided
1 cup brown sugar, packed
1 t cinnamon
1/4 t nutmeg
1/8 t ground cloves
1 T baking powder
1/4 t baking soda
1/4 t salt
1 cup canned pumpkin
1/2 cup milk
1/3 cup butter, melted
2 eggs

Preheat oven to 350°.
Combine 1 cup flour and all other ingredients in mixing bowl.
Beat with electric mixer at low speed until blended.
Increase speed to high for 2 minutes.
Gradually add remaining flour while on low speed until well blended.
Pour batter into greased 9 x 5 loaf pan.
Bake 50 to 55 minutes, until knife inserted comes out clean.

Slice and savor!

Parmesan American Fries

Appetizer Parmesan FreisWell Yum Tum! Darn, it’s the week end and this is freaking fun easy (nod to some R. Kelly song!) Have fun with this. Forget the calories…”it’s the freaking weekend!! Baby I’m about to have me some fun!” Get out there and shout people. It’s FRIDAY, FINALLY!

 

1 26 oz bag Ore-Ida Extra Crispy Fast Food Fries
1/4 t salt
1/4 t pepper
1/ 2 cup grated Parmesan cheese
2 Tbs chopped fresh rosemary
Zest of 1 lemon

Preheat oven to 450°.
In small bowl, combine parmesan, rosemary, and lemon zest.
Bake fries according to package directions.
*To render crispy hors d’oeuvres fries, I find that they are undercooked at package directions. I always cook them longer, checking at 2 minutes intervals until desired crispness arrives.
Remove 2 minutes before fries are finished cooking.
Sprinkle with Parmesan mixture, salt, and pepper
Return to oven and cook additional 2 minutes.

Flower Arranging in Hotel Rooms, part one

This was Brenton’s 30th birthday in DC. You may be wondering why I put myself through this exercise; the truth is that when traveling to these bashes I like the way my arrangements turn out a bit better than those of an unfamiliar florist. Now don’t give me that you crazy person look! Pic on the left is of one of my work buckets in the loo of our room at the fab Hotel Monaco. Request from the birthday gal…peonies and hydrangeas, also my favorites!

Blueberry Jam

It’s blueberry season people! And since Hurricane Arthur is showing his ugly face to us coastal folks, run out and get your berries now. It’s going to be ugly tonight and tomorrow…perfect time to get your jam on. All you need are berries, lemons, and sugar. This is pectin free people!Sauces Blueberry Jam

3 pints blueberries
3 1/2 cups sugar
Zest of 1 lemon
Juice of 1 lemon

In large bowl, crush 3 cups berries with potato masher.
Pour in to soup pot.
Crush remaining berries in bowl.
Pour in to soup pot.
Add sugar, lemon zest and lemon juice.
Bring to boil over medium-high heat.
Boil 15 to 20 minutes stirring often.
Skim off any foam from time to time.
Ladle hot preserves in to hot jars, with 1/4 inch head room.
Prepare canned preserves in boiling water for 10 minutes.
Remove from water and make certain that lids “pop”.
Allow to rest for at least a day.
Good in cool, dark pantry for up to a year.

Fresh Corn Frittata

Well Hello Good People of the World! I’m almost back. Was down for the count for several days with a knee clean-up surgery…just about cleaned my clock too. But hey hey, the corner is turned and here I am. Thank you Chris Hasty. So, here we go! Throwing a double fresh treat right atcha. I received my first Leggett Farm Organics CSA box last Wednesday, and this year I included a dozen farm fresh eggs each week. Straight from Ben’s chickens. Look at these beauties. With fresh corn quickly growing as high as an elephant’a eye, I made this corn and fresh egg frittata. Out of the skillet, on to the plate, and down the hatch. Leggett Farms fresh eggs IIBrunch Corn Frittata1 Tbs olive oil
Kernels from 2 ears fresh corn
1/2 sweet onion, diced
1/4 t kosher salt
1/2 t fresh ground black pepper
1/4 t smoked paprika
1/4 cup low fat milk
6 large eggs, lightly beaten
2 t butter
1 1/2 oz Romano cheese, grated
3 Tbs chopped fresh cilantro

Brunch Corn Frittata IIHeat a medium ovenproof skillet over medium high heat.
Add oil and swirl to coat pan.
Add corn and onions.
Cook 3 minutes, stirring often.
Add half the salt and pepper, and paprika.
Stir and transfer corn mixture to bowl.
Wipe skillet clean with paper towel.
Combine remaining salt and pepper, milk, and eggs in medium bowl.
Stir with whisk until combined.
Stir in corn mixture.
Add half the cheese and half the cilantro; stir to combine.
Preheat broiler to high.
Return pan to medium heat.
Add butter to pan and swirl as it melts.
Add egg and corn mixture to pan.
Cook 1 minute without stirring.
Gently slide pan back and forth to keep eggs from sticking.
Cover and reduce heat to low.
Cook 4 to 5 minutes until eggs are set and golden on bottom.
Note that top of eggs will still be a bit runny.
Sprinkle evenly with remaining cheese.
Broil 1 to 1 1/2 minutes until eggs are set and cheese browns a bit.
Allow to rest 3 minutes.
Sprinkle with remaining cilantro to serve.

Serves 4 at a simple 230 calories per serving!

Leave it to our dear friend and jeweler Hattie of Kiss the Ring to come up with this idea. Oh wait…Hattie is always creating great design ideas in that head of hers! A couple of Christmases ago Brenton and Gray gave the don a set of cuff links with their initials engraved, one on each link. Now, stop me if this isn’t brilliant!
