Penne with Tomatoes and Havarti

Pasta Penne Havarti Tomatoes IIjpgSunday Night = Pasta Night!  I didn’t know if my strength was going to hang on to cook last night.  The Don and I had been out of town for the lovely wedding of our dear friend Lawrence.  (Tons of fun, but in the end, travel and elegant parties can be tiring depending on your current age!) His bride is lovely outside and in, and I look forward to years of experiences with the new Mr. and Mrs.  Adding to the energy drain, was the ordeal of hours, literally, spent yesterday afternoon, pouring over Istanbul hotels, studying web sites, phone calls with AmEx, phone calls with British Air, and phone calls with Brenton (who had spent equal or more hours studying).  At the end of the day, we were booked. Whew!  Re-energized by that monkey off my back, and having drained the remains of the refrigerated Friday Margarita pitcher, I managed to crawl in to the kitchen and cook one of my favorite pastas.  I don’t eat pasta often, so I want it to totally count when I do! Mmmmm.Pasta Penne Havarti Tomatoes

3 Tbs olive oil
1 small sweet onion, chopped
1 t minced garlic
2 35 oz cans crushed tomatoes or coarsely chopped stewed tomatoes
2 Tbs fresh basil, finely chopped (or 2 t dried)
1 t dried red pepper

1 lb bag of Penne Pasta
1 cup grated Havarti
1/2 cup shaved fresh Parmesan cheese
1/4 cup finely chopped fresh basil

Heat olive oil in large pan over medium heat.
Add onion and garlic. Sauté 5 minutes.
Mix in tomato, basil and red pepper.
Cook on medium low 15 minutes, stirring occasionally.
Season with black pepper.

While sauce is cooking, cook pasta according to package directions.
Drain and rinse lightly with warm water.
Toss with 1 Tbs olive oil.

Preheat oven to 375°.

Pour pasta into the sauce pot.
Add the Havarti.
Lightly stir to mix all together.

Pour mixture in baking dish.

Bake 30 minutes uncovered.
Sprinkle with basil and Parmesan.

Serves 6 to 8.

*When tomatoes are in season, always avail yourself them in creating the sauce.  The flavor is much fresher and cleaner tasting.

Leggett Farm Organics CSA Box #2

Whoop Whoop!  I just received my second CSA (Community Supported Agriculture) box of the spring/summer season.  Ben Davis, owner of Leggett Farm Organics, dropped it off himself!  You simply put last week’s empty basket on the doorstep and he swoops that off and in its place is a glorious fresh basket filled with this week’s produce.  AND he emails you with what’s inside PLUS recipes.  How organized is that!  Nice!  ps…i’m making Kicked Up Collards tomorrow afternoon, mmmmmm.Leggett Farms Box 2

Yesterday was spent with The Don, Mother, Gray, Marc, and that darling Liam.  McCormick & Schmick’s was the venue.  Gray pops up with a Mother’s and Father’s Day surprise for the Pink concert in Boston!  Flaberghast! (According to Urban Dictionary…”an action of being amazed”) And in case the day couldn’t offer additional greatness, Brenton, in her absence mailed us cards via the manager and sent our favorite champagne. Brilliant! (According to Urban Dictionary…the British use this to compliment “outstanding performance, concept, or product”)  Uhh, the waiter wasn’t shabby either!  As Marc quipped “Did Brenton order the waiter too?”  FABULOUS!

The Young’s Brew

PiratesToday we celebrate a fabulous ECU basketball victory which occurred a week ago today, April 2nd.  This is the first ever post season tournament victory for ECU basketball in the history of the program… thanks to Coach Jeff Lebo!  So, in celebration I offer you The Young’s Brew!  Note the purple and gold napkins for the ECU Pirates…arrrrrrrgh!!

You will need:
6 light beers
1 can frozen lemonade, undiluted
1 cup vodka
1 lemon, sliced
Crushed ice

Mix beer, lemonade, and vodka together in large pitcher.
Pour in glass over crushed ice.
Garnish with lemon slice.

Gals Night Out!

Girls Nite Out 2013I try to gather smart, fun gal pals of all ages every couple of months.  I mix up the crowd each time so that the conversation stays sharp, and excellent thoughts on everything from tech to travel to cooking to parenting and grand-parenting are exchanged. None of us want to lose our edge, so this swapping of experiences helps keep us on our toes.

Yesterday I had the pleasure through my Garden Club to spend a delightful two hours at this beautiful farmhouse, home to Leggett Farm Organics owner, and then take a brief tour of the farm. The crops are in their infancy now but we all got quite thrilled about our CSA (Community Supported Agriculture) boxes that will begin delivery mid April.  Ben is extremely knowledgeable, passionate about his organic farm and produce, and passionate about spreading the word here in ENC.  Check out his amazing website and scrumptious recipes.  He is truly living the life!  Oh…and did I mention he is also raising chickens?!  Fun times!

The Opera!

TomsWhen were you last able to go to the opera in sweat pants and Vans?  Well, I just accomplished that last night in ENC (as we affectionately call Eastern North Carolina).  Our local Carmike has the HiDef feed from the Metropolitan Opera, albeit, not the live stream that  NYC folks receive; but it is fantastic none the less!  A child’s combo of popcorn, beverage, and gummy treats and I was raring and ready.  It was a double billing of Cavalleria Rustican and Pagliacci.  Just marvelous!  And since “it ain’t over til the fat lady sings” (quote attributed to Ralph Carpenter), I decided to give her a Lemon Yogurt Loaf for her sweet tooth!
